Getting started

Cut the avocado in halves and remove the pit. With a spoon, scrape out 1 or 2 tablespoons of the avocado flesh to make the hole a little bit bigger.

Preheat the oven to 350°F/175°C and while it’s warming up, carefully crack an egg into each avocado half and season it with salt and pepper.

Burma Spice Tip: crack the egg in a small bowl and then transfer it slowly in to the avocado.

Bake the avocado for 15 to 20 minutes, or until the egg reaches a consistency you like.

Take the avocados out of the oven and top them with the chopped bacon, parmesan cheese, and chives.

To finish it up, sprinkle with the sweet Spanish paprika, it will give the preparation a subtle edge. All our peppers are grown in Spain, this means that the sweet Spanish paprika you purchase from Burma Spice is authentic and true to traditional Spanish paprika.
