Chicken Paprikash

2 lbs of chicken thighs and legs

1 cup of chicken broth
3/4 cup of sour cream

This delicious Hungarian chicken paprikash is creamy, tender and overall a real winner. It might be in the top 5 of comfort dishes in Hungarian cuisine, so it will make you instantly feel good. This classic, old-style east European dish will take about an hour to prepare and 5 to 10 minutes in your plate.

Getting Started

  1. Season the chicken with salt and pepper and cut the onions lengthwise.
  2. Heat the butter in a pan and brown the chicken pieces over medium-high heat placing them skin side down in the pan. Let them sear for about 2-3 minutes on each side or until the skin is golden and crisp. Remove the chicken from the pan and place on a plate to rest.
  3. Add the onions to the same pan and sautée them until translucent and lightly brown. It takes about 7 minutes. incorporate the garlic and let it cook until soft.
  4. Add the paprika and the flour and stir until everything is combined and the flour is cooked. This will take about 4 to 5 minutes.
  5. Incorporate the chicken broth while stirring to avoid lumps and then add the tomatoes.
  6. Nestle the chicken in the pan – skin side up- and cover with a lid. Lower the heat and let simmer for about 30 to 40 minutes or until the chicken is cooked through and the sauce has thickened.
  7. When the chicken is done remove it from the pan and add slowly the sour cream to the sauce. Finally, add the chicken back to the pan and bathe it in the sauce.
  8. Serve chicken paprikash with dumplings, rice, noodles or spaetzle.

You can also make chicken paprikash on an instant pot or a slow cooker.
