Herb Stuffed Mushrooms

18 mushrooms
1 ½ tbsp olive oil
Pepper to taste
1 tsp salt
7 pieces, sun-dried tomatoes soaked in olive oil
1 tsp peppermint leaves
1 tsp herbes de provence blend
2 tsp nutritional yeast

These vegan stuffed mushrooms are the perfect appetizer for a dinner party, plus, they are really easy and “cheesy” to make. What we love the most about this recipe is that these small “gold-dusted nutrition bombs” are gluten free, dairy free, and full of flavor, and it will take only 6 ingredients and 35 minutes to make.

Yummy + full of flavor + easy to make = the perfect stuffed mushroom recipe!

Let’s get started:

  1.   Preheat the oven to 375º F
  2.   Clean the mushrooms and with a teaspoon remove the stems.
  3.   Brush each mushroom with olive oil, on the inside and the outside.
  4.   Chop the 7 pieces of sun-dried tomatoes into small pieces
  5.   In a bowl mix the salt, peppermint leaves, herbes de provence and the nutritional yeast.
  6.   Stuff the mix into the mushrooms and sprinkle on the top the sun-dried tomatoes.
  7.   Put the mushrooms on the baking tray and bake for 20 minutes.
  8.   Serve and enjoy!
