Thai Sticky Rice with Mango

Featured Spices
For rice:
1 cup Thai sticky rice
1 cup coconut milk
1/3 cup palm sugar
1/2 teaspoon salt

For coconut sauce:
1/3 cup coconut cream
3 teaspoons palm sugar
1/4 teaspoons salt
1 ½ teaspoons corn starch
1 teaspoon water
2 mangoes of your choice

Thai sticky rice with mango is a very popular dessert in Thailand and a surprising rich decadence everyone should try at least once—especially if you like mango. This recipe is made with glutinous Thai sticky rice mixed with coconut milk sweetened with palm sugar. We then mix up a simple batch of rich coconut cream to pour over top and serve with fresh, ripe slices of mango. Simple to make with just a few ingredients, Thai sticky rice with mango may just be the biggest hit you pull out of your hat the next time you serve dessert to your friends and family. Bring it to your next potluck and then sit back and bask in the glow of “Ooooooo” and “Wow!”.

Preparing Thai sticky rice

Soak the rice for a minimum of 1 hour to a maximum of 5 hours. Drain the rice.

Steam the rice, using your preferred method. We have an easy to follow recipe for sticky rice in a pot.

While the rice is cooking, prepare the sauce that is to be mixed with the rice.

In a pan over medium-low heat, mix together the following:
1 cup coconut milk
1/3 cup palm sugar
1/2  teaspoon salt

Stir until the sugar has dissolved.

Once the rice is cooked, place it in a bowl of your choice. Add to it the sauce that you made and let rest for 10 minutes.

Making the coconut sauce topping

For the thicker coconut cream topping, mix in a pan over medium low heat,
1/3 cup coconut cream
3 teaspoons palm sugar
1/4 teaspoon salt

Mix corn starch with the water until no lumps remain.

Add the corn starch/water to the coconut milk mixture and stir until the sugar has dissolved and the sauce has thickened (about 2 – 3 minutes).

For serving, slice the mangoes into strips. Place the slices next to a mound of sticky rice on a plate and top generously with the sauce topping.
