½ cup of fresh ginger 1 cup of mint leaves 2 cups of fresh pineapple chunks 2 cups of apple cider vinegar ½ tsp of lime juice 1 cup of sugar 1 tsp of ground turmeric
At Burma Spice we love shrubs; basically, a shrub is a fruit-infused vinegar to which you can add sparkling water or alcohol. This soft drink was really popular during America’s colonial era, but in the last few years, has regained its popularity.
Making Turmeric Shrub
Chop or muddle the ginger and the mint leaves to release oils.
In a bowl place the 2 cups of fresh pineapple chunks, the lime juice, the ground turmeric, fresh ginger, mint leaves, and sugar. Mix well or shake for 10 seconds, and cover it a clean dish towel.
The next day, add to the bowl 2 cups of apple cider vinegar and cover again with a clean dish towel.
Let infuse for one week at room temperature.
Strain the juice.
Put the mix in a jar bottle. This shrub can be stored up to 6 months in the fridge.
