Vietnamese Summer Rolls

Featured Spices
8 spring roll rice paper wrappers
1 avocado sliced
3 medium radishes
1 small head of purple cabbage thinly sliced
1 carrot, peeled and julienned
1/2 red pepper julienned
Handful fresh cilantro
1 tsp of Sesame Seeds
1 tsp of Aleppo Pepper

Known as rice paper rolls, these rolls are delicious, colorful, and healthy! To make them you will need rice paper, noodles, and your favorite vegetables or fruits. We decided to create these vegan summer rolls with our favorite vegetables but you can make these vegan rolls with the vegetables and fruits of your choice. This is the magic of the Vietnamese Summer Rolls

Getting started:

  1. Prepare the rice paper wrappers: Soak 1 rice paper in hot water until it’s completely soft and flexible. About 10-20 seconds.  Then remove it from the water and place flat onto your work surface, it can be a cutting board.
  2. Before filling the rolls, make sure every single ingredient is chopped and cooked (the radishes, the purple cabbage, the carrots, and the red pepper)
  3. Fill the rolls: Place a few sticks of carrot, purple cabbage, red pepper, and sprinkle on the top some flakes of Aleppo Pepper and Black Sesame Seeds. Then place over 3 slices of avocado, 1 or 2 slices of radishes and cilantro.
  4. Roll them: To roll up your summer rolls fold over one side of the rice paper and then fold over top and bottom, like a burrito. Be careful as it can be a little bit tricky. Continue rolling to seal.
  5. Serve with your favorite sauce.
